Biography

Dr. Smith a Regents Professor in the Department of Nutritional Sciences and holds the John and Sue Taylor Endowed Professorship of Human Sciences. Her BS and MS degrees are in Exercise Science and Clinical Exercise Physiology, and she is a Certified Strength and Conditioning Specialist in addition to holding a Ph.D. in Nutrition. During her doctoral training, Dr. Smith was on the faculty at Oklahoma Baptist University where she taught and was director of the university’s wellness program. Upon completion of her degree, she moved on to do a NASA post-doctoral fellowship studying how vitamin E counters the effects of spaceflight on bone health. Dr. Smith was on the faculty at the OU Health Sciences Center in the Department of Surgery for ~3 years before returning to Oklahoma State University. Her research focuses on understanding how nutrients and other dietary bioactive components from plant-based foods influence the immune response which in turn affects the risk for age-related diseases, especially musculoskeletal disease. More recently this work has included a focus on understanding the role of dietary components with prebiotic activity on the gut-bone axis. Her laboratory utilizes a translational research approach that ranges from studies with cell culture systems to human clinical research.
